Oven-fried Chicken, Mashed Potatoes, and Green Beans
Talk about comfort food.
Is there anything more "comfort" than fried chicken? I mean really. I don't think so. Oven fried might be slightly better for you. I don't know. It still tastes good, and it's less messy, in my opinion. And what goes better with fried chicken than mashed potatoes and green beans? Mmm. Tastey.
Ingredients:
Chicken (any kind you want)
Flour
Egg,
Seasoning (at least salt and pepper, I use Cajun seasoning)
Potatoes (I used russet)
Milk (about 1/4-1/2 cup for 2 potatoes, more for more)
Butter (about 2-3 tablespoons per two potatoes)
Green beans (I used canned)
1 tablespoon butter
1 teaspoon onion powder
1 tablespoon bacon bits
Directions:
Put the flour and egg into two separate plates. Mix the seasoning into the flour. I used about 1/2 teaspoon to 1 teaspoon of Cajun seasoning. Dredge the chicken in the flour, then the egg, and then the flour again. Lay on a a greased baking sheet. Spray with cooking spray. Bake at 400-450 degrees for about 10-15 minutes. Turn the chicken over and continue baking for another 10-15 minutes, until chicken is cooked through. Turn the broiler on and broil for about 5 minutes on each side. This will help crisp up the breading.
While the chicken is cooking, boil a pot of water. Peel and cube the potatoes. Add to the boiling water and cook until tender. Drain the water. Add the milk and butter, and mash with a potato masher until desired consistency. Season with salt and pepper.
In a small pan or microwave safe dish, empty the can of green beans. Add the butter, onion powder, and bacon bits. If in a pan, heat over medium heat until the butter is melted. Mix together well. If microwaving, microwave covered for 1 minute. Stir everything together. Microwave another 30 seconds. Stir and serve.
If you'd like, you can make some gravy for your potatoes and chicken. I made white gravy for mine. :)
